Simple Apple Salad
An easy and delicious salad that you can enjoy all year round. Honeycrisp apples give this salad a lovely, sweet taste, but any type of apple can be used.

Ingredients
- 2 Tbsp olive oil, extra virgin
- 2 Tbsp lemon juice, freshly squeezed
- ¼ tsp kosher salt
- ¼ tsp black pepper
- 2 cups (250 g) Honeycrisp apple, diced
- 2 cups (200 g) celery, sliced
- ⅓ cup (40 g) red onion, sliced
- ½ cup (30 g) fresh parsley, loosely packed
Directions
- In a large bowl, whisk together the oil, lemon juice, salt and pepper.
- Add the remaining ingredients and toss to coat.
