Savory Watermelon Salad

Savory and slightly sweet, a combination for the whole family to enjoy.

Ingredients

  • 3 cups (455 g) seedless watermelon, chopped
  • 1 medium cucumber (200 g), peeled, seeded and chopped
  • 1 large tomato (125 g), seeded and chopped
  • ¼ cup (45 g) kalamata olives, pitted and halved (optional)
  • 1 Tbsp fresh mint leaves, thinly sliced
  • 2 tsp olive oil, extra virgin
  • 2 tsp kosher salt
  • 1 tsp balsamic vinegar
  • Ground black pepper, to taste

Directions
 

  • In a large bowl, combine watermelon, cucumbers and tomato.
  • Sprinkle with salt and gently toss to combine.
  • Transfer to a colander and let sit in the sink or in another bowl for a least 10 minutes to let the liquid drain.
  • Transfer the mixture back to a large bowl.
  • Add in the olives, mint, oil and balsamic vinegar.
  • Season with pepper to taste (generous amounts recommended). Toss to combine.

Notes

Salad will keep up to 2 days, refrigerated.
