Savory Watermelon Salad
Savory and slightly sweet, a combination for the whole family to enjoy.

Ingredients
- 3 cups (455 g) seedless watermelon, chopped
- 1 medium cucumber (200 g), peeled, seeded and chopped
- 1 large tomato (125 g), seeded and chopped
- ¼ cup (45 g) kalamata olives, pitted and halved (optional)
- 1 Tbsp fresh mint leaves, thinly sliced
- 2 tsp olive oil, extra virgin
- 2 tsp kosher salt
- 1 tsp balsamic vinegar
- Ground black pepper, to taste
Directions
- In a large bowl, combine watermelon, cucumbers and tomato.
- Sprinkle with salt and gently toss to combine.
- Transfer to a colander and let sit in the sink or in another bowl for a least 10 minutes to let the liquid drain.
- Transfer the mixture back to a large bowl.
- Add in the olives, mint, oil and balsamic vinegar.
- Season with pepper to taste (generous amounts recommended). Toss to combine.
Notes
Salad will keep up to 2 days, refrigerated.
