Jicama Slaw

Jicama is naturally low in protein. It’s slightly sweet, crunchy, and perfect for a homemade slaw. This recipe is great for the whole family and will be a hit at your next barbeque!

Ingredients

  • 2 cups (140 g) red cabbage, shredded
  • 1 cup (110 g) carrots, julienned
  • 1 cup (120 g) jicama, julienned
  • 1 jalapeno (14 g), thinly sliced
  • ½ cup (8 g) cilantro, chopped
  • 2 Tbsp lime juice, fresh squeezed
  • 1 tsp sugar
  • ½ tsp coarse salt

Directions
 

  • In a large bowl, mix together cabbage, carrots, jicama, jalapeno, and cilantro.
  • Whisk together the lime juice, sugar, and salt in a small bowl.
  • Pour the lime juice mixture over the slaw and toss to combine.
  • Let stand for at least 1 hour before serving, allowing the cabbage to soften and the flavors to combine.
  • Stir well before serving.
