Orange Glazed Carrots

Ingredients

  • 4 cups (488 g) carrots, peeled and sliced
  • ¼ cup margarine
  • 3 Tbsp (41 g) brown sugar, packed
  • ½ cup water
  • ¼ cup (60 mL) fresh orange juice
  • 1 tsp orange zest
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Directions
 

  • Add the first 5 ingredients (through the orange zest) to a medium saucepot on medium-high heat.
  • Bring to a boil.
  • Reduce heat to medium, cover, and simmer until carrots are tender, yet still with a little bite, about 8-10 minutes.
  • Season with salt and pepper to taste. Serve with chopped fresh parsley.
