Orange Glazed Carrots
Low in protein and naturally sweet, here’s how to turn your everyday carrot into your family’s new favorite side dish.

Ingredients
- 4 cups (488 g) carrots, peeled and sliced
- ¼ cup margarine
- 3 Tbsp (41 g) brown sugar, packed
- ½ cup water
- ¼ cup (60 mL) fresh orange juice
- 1 tsp orange zest
- Salt and pepper, to taste
- Fresh parsley, for garnish
Directions
- Add the first 5 ingredients (through the orange zest) to a medium saucepot on medium-high heat.
- Bring to a boil.
- Reduce heat to medium, cover, and simmer until carrots are tender, yet still with a little bite, about 8-10 minutes.
- Season with salt and pepper to taste. Serve with chopped fresh parsley.
