Cucumber, Basil & Jicama Salad
This salad is low in protein but full of flavor. The fresh blend of cucumber and jicama combine with basil leaves makes a delicious flavor for a great salad.
Ingredients
- 1 cucumber, peeled & thinly sliced
- 1 cup jicama, peeled & julienned
- ¼ cup fresh basil leaves, chopped
- ¼ cup red onion, thinly sliced
- 3 Tbsp olive oil
- 2 Tbsp fresh lime juice
- Salt & pepper
Directions
- Combine the sliced cucumber, jicama, basil, and red onion in a large mixing bowl.
- Drizzle olive oil and lime juice over the salad.
- Toss gently to combine.
- Season with salt and pepper to taste.
