Crunchy Turnip & Carrot Salad

Ingredients
- 3 small turnips (183 g), peeled and grated
- 4 medium carrots (244 g), peeled and grated
- ½ cup (30 g) chopped parsley
- 2 Tbsp fresh lemon juice
- 2 Tbsp olive oil
- Sea salt, to taste
Directions
- Place the turnips, carrots and parsley into a salad bowl.
- Add the lemon juice and olive oil.
- Season with salt and toss to combine.
