Cucumber, Basil & Jicama Salad

This salad is low in protein but full of flavor. The fresh blend of cucumber and jicama combine with basil leaves makes a delicious flavor for a great salad.

Ingredients

  • 1 cucumber, peeled & thinly sliced
  • 1 cup jicama, peeled & julienned
  • ¼ cup fresh basil leaves, chopped
  • ¼ cup red onion, thinly sliced
  • 3 Tbsp olive oil
  • 2 Tbsp fresh lime juice
  • Salt & pepper

Directions
 

  • Combine the sliced cucumber, jicama, basil, and red onion in a large mixing bowl.
  • Drizzle olive oil and lime juice over the salad.
  • Toss gently to combine.
  • Season with salt and pepper to taste.
