Cauliflower & Zucchini Topping
One great recipe with three great ways to enjoy it. Serve over low protein rice, over greens or as a taco. Great for people with PKU or anyone following a diet low in protein.

cauliflower florets (top sections) (78 g)

medium zucchini (98 g)

taco seasoning
Directions
In a large frying pan, heat oil and butter on medium heat.
Add cauliflower and zucchini to pan.
Cook for 8 minutes, stirring frequently.
Mix in taco seasoning and cook for an additional 2 minutes.
Notes
Serve over low protein pasta, low protein rice, or inside corn taco shells.
