Cauliflower & Zucchini Topping
One great recipe with three great ways to enjoy it. Serve over low protein rice, over greens or as a taco. Great for people with PKU or anyone following a diet low in protein.

Ingredients
- 1 Tbsp olive oil
- 1 Tbsp butter
- 6 cauliflower florets (top sections) (78 g), finely chopped
- ½ medium zucchini (98 g), finely chopped
- 1 packet (13.6 g) taco seasoning
Directions
- In a large frying pan, heat oil and butter on medium heat.
- Add cauliflower and zucchini to pan.
- Cook for 8 minutes, stirring frequently.
- Mix in taco seasoning and cook for an additional 2 minutes.
Notes
Serve over low protein pasta, low protein rice, or inside corn taco shells.
