Asian Napa Cabbage Wraps

Low protein Chef Natalie explores a different flavor profile by using napa cabbage as a low protein wrap alternative and it's a hit!
Makes6 wraps

Ingredients

  • cup (150 g) low protein rice, cooked (makes ~2 cups of cooked rice)
  • 2 Tbsp sesame oil, divided
  • 3 Tbsp coconut aminos* (low protein substitute for soy sauce)
  • 1 Tbsp grated fresh ginger
  • 1 Tbsp rice wine vinegar, or lime juice
  • 1 carrot (61 g), peeled and diced
  • 2 garlic cloves, minced
  • ¼ cup (35 g) diced water chestnuts
  • 1 green onion/scallion (15 g), white and green parts sliced
  • 6 leaves (90 g), from 1 large head of Napa cabbage

Directions
 

  • Cook rice according to package instructions.
  • Meanwhile, mix coconut aminos, 1 Tbsp sesame oil, rice wine vinegar, and ginger in a large bowl. Set aside.
  • Heat a medium skillet over medium heat and add remaining 1 Tbsp sesame oil.
  • Add diced carrots and cook for 5-7 minutes or until just tender.
  • Add garlic and cook for one minute longer or until fragrant.
  • Turn off the heat and stir in water chestnuts.
  • Transfer the carrot mixture to the large bowl containing the sauce.
  • When rice is finished cooking, drain and add to the large bowl with the carrot mixture and sauce immediately, while the rice is still hot to absorb the sauce.
  • Mix in the green onions and toss well to combine.
  • To assemble the wraps, spoon the rice mixture into a piece of cabbage, wrap and eat.

Notes

Drizzle Asian Dipping Sauce on top of your wraps or dip your wrap in sauce, as desired.
